Food for Thought: Avocado Dip
No LITERALLY… Food for thought! Green Mountain at Fox Run considers a lot of things when they are preparing the meals for their program participants. Robyn, their head nutritionist, works hard to jam pack each and every item they serve with nutrition. Did you know that Avocado feeds your brain? It helps you think well, feel well, and look well. The Omega Fatty Acids in Avocados are the quality fats that your body craves. Avocados have 13 vitamins that the body needs: vitamins A, C, D, E, K and the B vitamins!
During my time at GMAFR the chefs gave a food demonstration: Salsa- The Forbidden Dance. I spent the whole time laughing loudly with Caitlin, another program participant who I know I’ll be friends with for years to come. At one point one of the chefs said, “You don’t want to pulse the avocado too much… you want to keep
it chunky.” Caitlin and I decided that we would make t-shirts. They’ll have a bowl of avocado dip on the front and on the back they’ll read:

Avocado Dip:
- 3 avocados – peeled, pitted, and mashed
- 1 lime, juiced
- 1 teaspoon salt
- 1/2 cup diced red onion
- 3 tablespoons chopped fresh cilantro
- 2 roma (plum) tomatoes, diced
- 1 teaspoon minced garlic
- 1 pinch ground cumin (I preferred SMOKED cumin!)
